I was asked that question recently and decided to look into it. Here’s what I found:

First regarding sleep; a lack of motion can lead to hardening of blood vessels which in turn can lead to heart disease. It has been shown that exercise will burn calories and in turn, will burn fat thus helping to keep weight off.

When we exercise more than we eat, it is easier to burn off that excess energy thus lowering our weight to more healthy levels.

When we sleep we give our bodies the opportunity to recharge rebuild and relax. When that happens, there is little movement of the body up to the time that we awaken from sleep.

While that is happening, we are digesting and converting into energy the food we have taken in, which is stored in our fat cells ready to be used for the activity.

It has been shown that when our arteries are hard, they can be more easily blocked by cholesterol and blood clots. So exercise can actually help blood vessels to become more flexible and cleaner due to the plaque being broken down.

The question to me about ‘sleep versus exercise’ has been answered; we need both of course, but perhaps, surprisingly, sleep has the edge.

Humans can go 40 days without food, but only 2 or 3 without sleep. Because you enjoy a lie-in and suffer guilt pangs for it, you can now relax (literally) in the knowledge that it’s “good for ya health!”

A Letter to My Last Child

My dearest daughter,

You were born at a time when the world had changed. The country was in lockdown and uncertainty stained the air. But you were due, there was no changing that. I couldn’t go back and replan your due date to make you arrive at a less scary time. You were coming and I had to prepare.

Your brothers and sister were no longer at school. They patiently anticipated your arrival with me, days felt longer when we couldn’t go anywhere, no shopping, no play dates, no parks, no cinemas, no eating out or zoos. Just one hour to exercise outside the house. With a mum who was nine months pregnant our activities were limited.

Daddy was at home with us, his work closed for a whole five weeks. Quite possibly the only time in our lives when this would happen. Daddy wasn’t allowed to come to your scans though nor hear your heart beat or even be with me in the hospital after you were born. But I had you, kicking away reminding me of better days to come. All the doctors, nurses, and midwifes spoke to us through masks, in full PPE for their protection and ours. Hand sanitiser was strapped to every bed, by every door and applied before and after every contact.

The country was encouraged by the government to stand on our door steps every Thursday evening and clap for the National Health Service, to thank our doctors and nurses for being on the front line, protecting us from this deadly virus. However, they were not provided with the best personal protective equiptment. Many of them caught the virus and lost their lives, yet, once lockdown was eased they were refused a pay rise.

Despite the huge change to our lives, most enjoyed the lockdown. We certainly enjoyed spending time together as a family in our own safe bubble. You, your brothers and sister enjoyed getting to know each other better, bonding with you and exploring the village we live in. Home learning had its challenges as did most things, even going for a food shop was a half day outing for daddy as he stood in two mile queues just to enter Asda.

When you did arrive, no one could meet you. Your nanny met you through a window, she stood one side and us the other to keep you safe. Those first newborn days quickly crept by and here I am now putting away your newborn and 0-3 clothes as you have outgrown this stage. I couldnt even register your birth until you were 14 weeks old.

Most say that 2020 has been a write off, a waste, but not for us because we had you, my dear sweet girl, my distraction from the chaos outside, my light in the darkness, the missing piece to our family puzzle. You came at a time when we needed joy and wow didn’t you deliver!

Although I couldn’t plan this, and despite the obvious fear of having a baby during a global pandemic, your arrival made it all the more sweet. I hope that one day you will look back on this and the world will have changed again. You will look back and know that you were one of the few born during lockdown. You will know that because of you I found a strength I didnt know I had. To be brave in the face of fear. In the scary moments I vowed to be the best mum to all of you children that I possibly could be. After all, when the world fell apart we had each other.

Cheesy Veggie Quesadillas

What you need:

  • 6 pcs. 9-inch whole wheat tortillas
  • 1 1/4 cup reduced-fat sharp Cheddar cheese
  • 1/2 cup chopped yellow squash
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped red bell pepper
  • 1/2 cup red onion
  • 1 tablespoon olive oil
  • Cooking spray

Heat olive oil in a large non-stick pan then cook squash, zucchini, mushrooms, red bell pepper and onion over medium-high heat for 7 to 9 minutes, or until tender. Remove from heat. Coat the same pan with cooking spray then place one wheat tortilla in it. Put about 1/4 cup of cheese over tortilla then top with 3/4 cup of the cooked vegetables. Sprinkle with another 1/8 cup of cheese then top with another tortilla. Cook 2 minutes per side or until golden. Slice into 8 triangles. Repeat with the rest of the ingredients.

Easy Meatless Chili

What you need:

  • 5 onions, chopped
  • 2 bay leaves
  • 2 cans black kidney beans, rinsed and drained
  • 2 cans dark red kidney beans
  • 1 can light red kidney beans
  • 1 3/4 cups diced tomatoes
  • 1 1/2 cups tomato juice
  • 1 1/2 cups frozen burger-style crumbles
  • 3 tablespoons chilli powder
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon garlic powder
  • Salt and ground black pepper to taste

In a large pot over medium-high heat, mix together onions, bay leaves, black kidney beans, dark red kidney beans, light red kidney beans, tomatoes, tomato juice, burger-style crumbles, chilli powder, cumin, garlic powder, salt and black pepper. Stir to combine ingredients well. Simmer for 1 hour.

Four-Cheese Vegetarian Lasagna

What you need:

  • Fresh pasta sheets
  • 2 eggs, beaten
  • 1 eggplant, cut into 1-inch rounds, grilled or fried
  • 5 tomatoes, roasted
  • 2 cups peeled and diced pumpkin, roasted
  • 2 cups ricotta cheese
  • 1 3/4 cups tomato sauce
  • 1 1/3 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1 cup grated parmesan cheese
  • 2/3 cup pesto
  • Salt and pepper to taste

Combine eggs, roasted pumpkin, ricotta cheese, feta cheese, pesto, salt and pepper in a large bowl. Spread half of the tomato sauce in a greased 9×13-inch baking dish then place 2 pasta sheets over the sauce. Arrange eggplant slices over the sheets then top with half of the pumpkin mixture. Place another 2 pasta sheets, arrange tomatoes over the sheets then top with the remaining pumpkin mixture. Sprinkle with half of the mozzarella then top with 2 more pasta sheets. Spread remaining tomato sauce onto pasta sheets then sprinkle with remaining mozzarella. Top with Parmesan. Bake in a pre-heated oven (350 degrees F) for 3- to 45 minutes or until golden.

The controversy over whether food is better for human consumption cooked or uncooked rages on.

On the one hand, the extreme cooking camp states that we must cook our food to ensure it does not contain harmful bacteria, and on the other hand, the extreme raw foodies feel that all cooking is harmful, and should be banned by law!

There is, as you might suspect, some truth, and some error in both these opinions. The purpose of this article will be to, hopefully, throw the light of sanity on this whole subject.

I, like most “raw foodies”, came to the movement, because I experienced vastly improved health and healing, and not because of any so-called scientific advice about cooked verses uncooked.

It was only later on, when I had slipped away from a mainly raw food diet, and began to lack energy and feel ill, that I realised just what a difference eating cooked food can make! The contrast was quite marked.

The truth is that anyone can experiment for a week or so eating mostly raw fruits and vegetables, salads and juices, and see for themselves whether cooked is better than raw.

I agree cooked is often tastier, and in a cold climate more comforting, but what price can you put on good health?

It is a well-known fact, that heat destroys. That being so it is quite obvious we damage the nutritional quality of foods when we subject them to the high temperatures of cooking.

It isn’t so well-known, that heat also changes the proteins that rapidly coagulate and can become carcinogenic, at worst, and depleted of all vitamin and mineral content at best.

It is claimed by the National Academy of Sciences latest report, called “Diet Nutrition and Cancer” that all cooking mutates foods and can be dangerous.

The effect on the body, is that the living enzymes are destroyed, and we are, by eating mostly cooked as opposed to raw food, replacing living, health-giving, strengthening elements with dead, lifeless, enervating stuff that in the long term, will shorten our lives and encourage disease. Yes, it seems, ‘death is in the pot’.

Notice how, in nature, most wild animals live relatively longer and healthier than domesticated ones. They are rarely overweight. Were you aware that in the Bible, in Genesis 1:29 — 30, we read;” and God said,” look, I have given you the seed-bearing plants throughout the earth, and I have given all the grasses and other green plants to the animals and birds for their food.”?

So, in summary: our society habitually cooks food, even though the practice is clearly against nature. As a result, we have more sickness now, despite medical advances than at any time in history, and it appears to be getting worse. It seems we hear of a new “plague” breaking out every week. As I write this item, “swine-flu” is in the headlines of all the Worlds media!

Scientific nutrition shows us that cooking can be destructive, and have tests and reports to prove it. Raw food adherents, on the other hand, appear to be getting healthier. Even reversing the ageing process (just look at the Hunza people of Northern Pakistan, for example.) looking better and younger, and far less prone to disease. It seems God really knows what He’s talking about!
